Thanks to the experience gained by a generation of pizza makers, we prepare our doughs with selected and different flours for each type of pizza: normal, high or in a pan, in order to obtain a final product that guarantees, in addition to taste, the maximum digestibility.
For this reason, as the Italian tradition dictates, we do not use chemical yeast, brewer's yeast and we give our doughs time to mature and rise for a minimum of 24/48 hours.
